Halibut Recipes 4
Oregon halibut are Pacific Halibut, the same specie as landed in Alaska and Canada. Due to a limited quota, the season for Oregon Halibut is extremely short. Sometimes, the season may only be one or two days long in a year.
When the season is open, Fisherman Direct buys all the halibut that two or three boats can land. We get these halibut within hours of being caught. We process, vac-pac, and freeze most of the catch absolutely as soon as possible. This time factor is what makes ourHalibut so delicious.
With super fresh fish, very high quality freezers, and vac-packing our halibut is as good or better than "fresh" from Alaska or Canada.
Due to the remoteness of Alaska ports, fresh from Alaska or Canada often means fish that are 7 or 8 days old, due to delays in transportation and distribution.
Halibut are a remarkable fish, and Alaska / Canada Halibut are stll good, but not quite the "super fresh" halibut that we can get locally.
Rockfish and Lingcod Recipes 3
- There are about 68 species of rockfishes found in the waters along the coast of North America. Most of these species are important to the commercial fishing industry. Rockfish found at Fishernen Direct are divided into Blacks - including Black Rockfish (black bass) and Blue Rockfish (priestfish), or Reds - Vermilion Rockfish On special occasions, if our fishermen are really lucky, we may have fresh Copper Rockfish, Quillback Rockfish (orange-spotted rockfish), or China Rockfish (yellowstripe rockfish). Fishermen Direct recommends that all large BFF (Big Fat Females) rockfishes, be released back into the ocean. BFF's lay bigger , better and more eggs than smaller females. Two great books on Rockfishes are The "Rockfishes of the Northeast Pacific" by Milton S. Love, Mary Yoklavich and Lyman Thorstrinson and (for those of us who love picture books) "Guide to the Northeast Pacific Rockfishes" By Donald E. Kramer and Victoria M. O'Connell.
- Fishermen Direct also has available fresh and fresh-frozen lingcod. This fish is not related to the cod but is a member of the Pacific greenling family. This whole fish can be stuffed and baked, but usually is cut into fillets that can be poached, sauteed or broiled. Oregon Troll Caught Wild Salmon
Ocean troll caught salmon are individually caught on a trolled lure, usually at fairly great depth (200 to 500 ft or more). From these deep, clear, cold waters, where the salmon have been feeding on some of the tastiest seafood in the world, the salmon are pulled to the surface one at a time where they are instantly processed and immersed in slush ice to lock in all the delicate flavors and freshness of thei unique diet.
This method of individual harvest, though it assures the highest quality, means that each troller does not catch very many salmon in a day of fishing. Salmon are hard to find in a very big ocean, and many times they are quite particular about what type or color of lure they will take, and it is really an art developed over many years of experience to do well as a salmon troller. Ocean troll-caught salmon are more expensive than other ways of catching, or raising salmon on farms, however the exceptional taste and delicate flavors unique to ocean caught troll salmon are well worth it.
The Seaon for Fresh Oregon Troll Salmon is from April thru October, and we try to have fresh salmon available (weather permitting). Salmon also freezes very, very well, so we take a portion of our catch toward the end of summer and vacuum pack and freeze it right off the boat, both as whole sides of salmon and also in portion sized pieces. This salmon is excellent, much better in taste than farmed fish, and available all winter long.

Hook and Line Albacore Tuna
Our Albacore tuna are caught by fishermen trolling Jigs on the surface behind their boats. This means that each fish is individually and carefully handled for the best Albacore tuna possible.
Canned Albacore is delicious, but frozen tuna loins are wonderful all year long. The fish freezes extremely well with our super cold freezers and vac-packing, and it great on the grill or cut into medallions and pan fried, or chopped into chunks for super delicious, and super healthy tuna burgers.
Albacore is very high in Omega-3 oils (heart friendly), and with no bones or waste is an easy, delicious, and economical meal anytime.

Dungeness Crab are Special
Dungeness crab have the highest ratio of meat to body weight of all popular crabs. Their meat is sweet and flavorful, delicious hot or cold, or in salads or crab cakes.
The Dungeness Crab from Fishermen Direct are always super fresh. The partner boats fish for Dungeness, and if the weather is too rough to fish, we have live tanks that hold our crab so that you always get super tasting crab, never old.
Our live tanks are chilled to keep the crabs happy and their meat firm, with special biologial filtration to remove the ammonia given off by the crab as a natural part of their life cycle. These live tanks are expensive and unusual in the industry, but assure you that the crab you get is abolutely sweet and flavorful.
