Dungeness Crab Gazpacho Soup

Dungeness Crab Gazpacho Soup

 

 

  • 1 pound Dungeness Crab Meat
  • 1/4 cup red wine vinegar
  • 32 oz. V-8 juice
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 tsp. salt/pepper
  • Juice of 2 lemons

 

ALL CHOPPED:

 

  • 1 c. bell pepper
  • 1 cucumber
  • 1 c. celery
  • 1/2 bunch parsley
  • 1 c. tomatoes
  • zest of 1 lemon

 


For SMOOTH gazpacho, blend all ingredients (except Crab) in blender or food processor until smooth. Gently fold in crab meat before serving.
For CHUNKY soup, mix together all ingredients, then gently fold in Crab meat.

Chill well before serving. As a garnish, use lemon wedges, parsley sprigs, croutons, etc. Serves 4. Best served chilled.
