Perfect Pan Fried Oysters
6-10 oysters per serving

  •  fresh Oysters
  •  eggs
  •  Panco
  •  seasoning to taste

Dip oysters in boiling water for 1-2 minutes. Drain and cool for about 10 minutes. Whip 1 egg per 5 oysters and let oysters rest in egg wash for several minutes. In Ziploc bag, place 2-3 cups Panco with seasoning to taste(we like Pistol River Mushroom Ultimate Seasoning, pepper, and dill). Shake 4-5 oysters at a time, then place them on waxed paper to rest for 15-20 minutes. Pan fry in a small amount of hot olive oil quickly until brown on both sides.
This way of cooking oysters gives tender, firm, and delicious results.

Partner, Fisherman

About 11 years, ago three veterans of the Oregon commercial fishing industry sat on the dock facing severe industry problems -- declining prices for their troll caught Chinook salmon, lack of markets for their fish and farmed-raised salmon, replacing wild-caught fish, selling for lower prices and containing artificial dyes.  To top it off there was no place to buy fresh fish or sell commercially caught fish in coastal Gold Beach.
