Cook and peel 1 1/2 lbs of Stir Fry Prawns or use 3/4 lb Oregon Pink Shrimp. In a small bowl, make a vinaigrette by combining oil, lemon juice, garlic, and spices. Set aside. Cut bread into fourths; slice in half lengthwise. Brush bottoms of each with 2 tsp vinaigrette. Divide feta equal on sandwich tops. Broil both halves just until cheese is melted. Arrange cucumber and tomato slices on sandwich bottoms. Divide shrimp equally among the four sandwiches and drizzle with remaining vinaigrette. Top with the melted cheese.

Back in April of 2003 the cannery building was being remodeled and Fishermen Direct needed some interior work done. Scott Boley hired me for my skills as a carpenter to build the Market's new shipping room. This project turned out well and led to many more.
